Job Description:

Supervises a key functional department overseeing that entire operation. The Catering Operations department develops and provides the great dining experiences on board our aircraft and ensuring the catering operation goes smoothly.

Job Responsibilities:

  • Responsible for financial, operational, quality, and regulatory performance of the assigned department and at times entire kitchen.
  • Supervises the production staff, manages resources, schedules and performance issues.
  • Responsible for production schedules, timeliness and quality of the product. Serve as SME on safety, service and procedures.
  • This role is responsible to develop, implement and sustain the food safety management system.
  • This position is also responsible for training and supervision of their direct and indirect reports, providing the oversight and resources required to ensure compliance with the established Food Safety Plan and FSMA
  • Supervise shift employees and runs the day to day departmental and/or overall operation
  • Responsible for departmental and facility quality, productivity, overall performance, food safety compliance, regulatory compliance and departmental safety programs
  • Responsible for ensuring departmental goals and objectives are met
  • Conduct Active supervision Tours (AST) to ensure the operation is functioning according to plan
  • If variances are identified – define, understanding, address and communicate an action plan
  • Conduct daily kick-off meetings with employee’s and communicate previous performance and the plan for each shift
  • Mobilize Employees through setting objectives and expectations while follow-up to recognize success
  • Ability to drive company vehicles on AOA for training and observations
  • Assists leader to coordinate production schedules with other departments to meet overall operational needs of the kitchen
  • Responsible for employee scheduling, attendance, discipline and payroll
  • Participates with kitchen and corporate resources to implement Lean processes and objective into the production process
  • Attend daily Shift Meeting (9:30am and 3:30pm)
  • Respond to issues in a timely manner, identify an action plan, implement and report out the variance to the manager
  • Other responsibilities as assigned around the 5 axis of performance – Quality, Customer Service, Health and Safety, Environment, and Productivity
  • Regular development, training and coaching of the employees to grow United organization from the front lines
  • Complete Variance Control reports, daily shift reports and productivity report

Job Requirements:

  • Strong knowledge of productivity and experience impacting results
  • Understanding of resource planning/scheduling tools/models
  • Knowledge of email applications (e.g., Outlook)
  • General knowledge of Microsoft Office products and applications (e.g., Word, Excel, Power Point)
  • Knowledge of food preparation

Qualification & Experience:

  • High School or GED Equivalent
  • Experience supervising union personnel
  • Experience in catering/ food services operations/ food preparation
  • BA/BS or Master’s degree OR Five or more years work experience equivalent to a BA/BS/MA/MS
  • Lean Manufacturing (7 wastes, problem solving, action plans) / Continuous Improvement experience
  • Experience working in a high volume, manufacturing, food production, restaurant or catering environment
  • Experience working in the airline industry
  • Experience in inflight catering
  • Food preparation experience
  • Food handling experience
  • Experience working with a diverse workforce
  • 3 years in catering/food services operations
  • FSMA
  • HACCP
  • ServeSafe
  • Understanding of catering processes (Transportation>ESL>Food)
  • eTA, TP06, KMS, SHARES
  • Safety and Regulatory Compliance (e.g., OSHA, USDA, FDA, Customs, HACCP, FSMA)
  • Fluent in Spanish and/or another second language
